This version skips sweeteners like maple syrup, so it fits into low-carb and sugar-free plans. You can make the full pound and freeze extras, or halve the recipe if you only need a few patties.

I prefer grab-and-go breakfasts, especially on busy mornings. These sausage patties are great on their own, folded into omelets, or served with low-carb biscuits. They’re also handy to add to meal-prep egg muffins for an easy portable meal.

Ingredients for Homemade Breakfast Sausage

You only need ground pork, a bit of fat, and a few spices to make juicy, flavorful patties.

How to Make Homemade Breakfast Sausage

Start by melting your chosen fat (bacon grease or lard). In a bowl, combine the ground pork, melted fat, and spices. I find using my hands is the easiest way to mix the spices thoroughly into the meat.

Divide the mixture into eight even portions and shape each into a patty. To freeze patties for later, place them on a parchment-lined baking sheet and freeze until solid, then transfer to a freezer bag.

When ready to cook, heat a skillet over medium heat and lightly oil it. Cook the patties 3–4 minutes per side, until browned and cooked through.
