This summer I’ve been obsessed with peaches. They’ve been exceptionally sweet and juicy — the kind you eat straight from the fruit bowl, in the car on the way home from the market, or sliced over yogurt. I barely made any peach recipes because honestly, I kept eating them plain. Still, I wanted to capture that late-summer peach flavor in a favorite breakfast: French toast.

French toast is a regular on this site, inspired by family recipes and updated with plant-based twists. For this version I developed a creamy custard using soaked cashews, apple juice, and coconut cream. The result is a rich, vegan custard that soaks into the bread and fries up golden and tender, while fresh peach slices add juicy brightness.

Peaches and Cream French Toast

Yield: Six to eight slices, depending on bread size

Dietary: Dairy-free, egg-free, soy-free, gluten-free option, vegan

Ingredients

  • 1/3 cup raw cashews, soaked in hot water for 1 hour
  • 1/3 cup apple juice
  • 1/2 cup coconut cream
  • 1 teaspoon vanilla paste (or extract)
  • Pinch of sea salt
  • 1–2 tablespoons vegan butter (for the griddle)
  • Your favorite gluten-free or regular bread, sliced
  • Fresh peaches, pitted and sliced

Instructions

  1. Drain and rinse the soaked cashews.
  2. In a high-speed blender, combine the soaked cashews and apple juice. Blend on high until completely smooth.
  3. Add the coconut cream, vanilla, and a pinch of salt. Blend again until fully incorporated to make a creamy custard.
  4. Heat a large griddle or skillet over medium heat and melt the vegan butter.
  5. Dip each bread slice into the cashew-coconut custard, allowing it to soak briefly but not become soggy. Place the soaked slices on the hot griddle.
  6. Cook for 2–3 minutes on the first side, until golden brown, then flip and cook another 2–3 minutes until cooked through and golden on both sides.
  7. Serve topped with fresh sliced peaches. Add a dusting of powdered sugar or a drizzle of syrup if desired.
