Ingredients
- 500 g white fish fillets
- 2 slices gluten-free bread – check depending on diet
- 1 tsp washed capers
- 1 handful black pitted olives
- 2 tbsp olive oil
- Juice of half a lemon – or 1 tsp lemon concentrate
- Pepper for seasoning
- 2 large potatoes or 3–4 smaller ones
- 2 tbsp olive oil
Instructions
-
Cut the potatoes into wedges or chips (chips cook faster). Toss them in 2 tbsp olive oil to coat. Spread in a single layer on a baking sheet and bake in a preheated oven at 200°C (390°F) for about 30–45 minutes, depending on the size of the pieces, turning once for even coloring.
-
While the potatoes cook, make the breadcrumb topping. Place the gluten-free bread, washed capers and olives in a food processor or handheld chopper and pulse until you have coarse breadcrumbs. You may need to work in two batches.
-
Transfer the breadcrumbs to a bowl and stir in the lemon juice and 2 tbsp olive oil. Season with a little black pepper to taste.
-
Place the fish fillets on a baking tray. Spoon the breadcrumb mixture over the fish, pressing gently so the fillets are fully covered and there are no exposed patches that could dry out.
-
Bake the fish in the same oven as the wedges for 10–15 minutes, until the fish is cooked through. Cooking time will depend on the thickness of the fillets.
-
Serve the baked fish with the homemade potato wedges and your choice of vegetables.
