Ingredients
  • For the crust:
  • 2 ½ cups Oreo cookie crumbs
  • 6 tablespoons unsalted butter, melted
  • For the cheesecake filling:
  • 4 (8 oz.) packages cream cheese, softened
  • 1 cup powdered sugar
  • 2 teaspoons vanilla extract
  • 2 cups heavy cream
  • 10 ounces bittersweet chocolate, chopped
  • For the chocolate topping:
  • 3/4 cup heavy cream
  • 6 oz. bittersweet chocolate, finely chopped
  • 1 tablespoon granulated sugar
Instructions
To make the crust:
  1. Finely crush the Oreo cookies in a food processor. Add the melted butter and pulse until the crumbs are evenly moistened.
  2. Press the crumb mixture firmly into the bottom of a prepared 9-inch springform pan. Lightly grease the pan edges if desired.
  3. Place the crust in the freezer while you prepare the filling.
To make the cheesecake filling:
  1. Melt the 10 ounces of bittersweet chocolate and set aside to cool slightly.
  2. In a medium bowl, beat the softened cream cheese with the powdered sugar until smooth and lump-free.
  3. In a separate bowl, whip the 2 cups of heavy cream until soft peaks form. Add the vanilla and continue whipping to stiff peaks.
  4. Gently fold the cream cheese mixture into the whipped cream on low speed just until combined.
  5. Divide the mixture evenly into two bowls.
  6. Stir the cooled melted chocolate into the first half of the mixture until evenly combined, then spread this chocolate layer over the prepared crust. Carefully spoon the second (plain) half of the cheesecake mixture over the chocolate layer to form the top layer.
  7. Refrigerate the assembled cheesecake for at least one hour to set.
To make the chocolate topping:
  1. In a small saucepan over low heat, combine the 3/4 cup heavy cream, 6 oz. chopped bittersweet chocolate, and 1 tablespoon sugar. Stir until the chocolate is fully melted and the mixture is smooth.
  2. Allow the topping to cool slightly, then pour it evenly over the chilled cheesecake.
  3. Once the topping has set and cooled, run a thin knife around the pan’s edge and remove the springform ring.
  4. To serve, slice with a sharp, thin, non-serrated knife. Optionally drizzle additional chocolate sauce or garnish before serving.
