Strawberry Clafoutis

Clafoutis is a classic French baked dessert that sits somewhere between a cake and a custard. I adapted this simple, delicious dish to feature one of my favorite fruits — strawberries — and the result was delightful. It’s easy to make, elegant, and perfect any time of day.

This strawberry clafoutis is lovely served warm or cold, and even makes a special breakfast when paired with fresh fruit or a scoop of ice cream.

Ingredients

  • 1 tbsp butter
  • 2 ½ cups strawberries
  • 3 eggs, at room temperature
  • cup granulated sugar
  • ½ cup whole milk
  • ½ cup heavy cream
  • 1 teaspoon vanilla extract
  • pinch salt
  • ½ cup all-purpose flour

Instructions

  • Make the batter: sift the flour, sugar, and salt into a bowl. In a separate bowl, whisk the eggs, milk, and heavy cream until well combined. Gradually add the egg mixture to the flour mixture, whisking until smooth.
  • Preheat the oven to 350°F (175°C). Grease an ovenproof dish (oval or individual ramekins) with the butter and lightly sprinkle sugar over the bottom and sides.
  • Arrange the strawberries in the prepared dish. Pour the batter evenly over the berries.
  • Bake for 30 to 40 minutes, or until the custard is set and lightly golden. Remove from the oven and let rest for about 5 minutes before serving. Serve warm, optionally with a scoop of ice cream or a dusting of powdered sugar.
