
Clafoutis is a classic French baked dessert that sits somewhere between a cake and a custard. I adapted this simple, delicious dish to feature one of my favorite fruits — strawberries — and the result was delightful. It’s easy to make, elegant, and perfect any time of day.
This strawberry clafoutis is lovely served warm or cold, and even makes a special breakfast when paired with fresh fruit or a scoop of ice cream.

Ingredients
- 1 tbsp butter
- 2 ½ cups strawberries
- 3 eggs, at room temperature
- ⅓ cup granulated sugar
- ½ cup whole milk
- ½ cup heavy cream
- 1 teaspoon vanilla extract
- pinch salt
- ½ cup all-purpose flour

Make the batter: sift the flour, sugar, and salt into a bowl. In a separate bowl, whisk the eggs, milk, and heavy cream until well combined. Gradually add the egg mixture to the flour mixture, whisking until smooth.

Preheat the oven to 350°F (175°C). Grease an ovenproof dish (oval or individual ramekins) with the butter and lightly sprinkle sugar over the bottom and sides.

Arrange the strawberries in the prepared dish. Pour the batter evenly over the berries.

Bake for 30 to 40 minutes, or until the custard is set and lightly golden. Remove from the oven and let rest for about 5 minutes before serving. Serve warm, optionally with a scoop of ice cream or a dusting of powdered sugar.
