I love brownies, and I love them even more with walnuts. This super-rich, easy walnut brownie recipe uses real dark chocolate and yields a chewy, deeply chocolatey batch you’ll want to make again and again.

Ingredients

  • 100 g dark chocolate (ideally 70% cocoa or higher)
  • 60 g sifted pastry flour
  • 120 g walnuts
  • 125 g butter, at room temperature
  • 2 large eggs
  • 160 g sugar

Instructions

  • Preheat the oven to 180ºC (355ºF). Line a square baking pan with parchment paper, covering the bottom and sides for easy removal.
  • Set up a bain-marie (a heatproof bowl over simmering water) and melt the chocolate gently over low heat, stirring until smooth. Remove from the heat and let it cool slightly.
  • In a bowl, beat the eggs with the sugar until combined. Add the room-temperature butter and the melted chocolate, mixing until fully combined and glossy.
  • Fold in the sifted flour and the walnuts, mixing only until the flour is absorbed — don’t overmix. A spatula or whisk works well.
  • Pour the batter into the prepared pan and bake for 20–25 minutes, until the top is set but the interior remains fudgy. A toothpick inserted near the center should come out with a few moist crumbs.
  • Allow the brownies to cool in the pan for about 20 minutes, then lift them out using the parchment paper and cut into 12 pieces.
  • Serve and enjoy. These brownies keep well in an airtight container for several days or can be frozen for longer storage.
