Note: This recipe was developed using the Char-Broil Big Easy Oil-Less Fryer. If you are cooking using the Char-Broil Smoker-Roaster Grill, cook with the lid open and set the temperature to High. You may need to adjust the cooking time.
Sriracha bacon onion rings made in the Char-Broil Big Easy are bold, flavorful, and easy to share. These rings won’t get as paper-crisp as deep-fried versions, but the combination of sweet onion, smoky bacon, and spicy Sriracha delivers plenty of crowd-pleasing taste. They disappear fast, so plan on making extra.

Easy To Make. Fun To Eat.
Serve these Sriracha bacon onion rings straight from the Big Easy, or make a quick dipping sauce by mixing Sriracha with Ranch dressing. The cool Ranch tones down the heat slightly while the Sriracha still shines through. I like adding a little extra Sriracha to the Ranch so the dip complements the rings rather than masking them.
A standard Big Easy basket holds a limited number of rings, so if you plan to make larger batches the Char-Broil bunk bed basket gives you substantially more cooking space.
It’s also smart to keep a few spare grease trays for your Char-Broil Big Easy so cleanup is easier after cooking bacon-wrapped items.

Sriracha Bacon Onion Rings on the Char-Broil Big Easy

Ingredients
- 2 large Vidalia onions
- Sriracha (amount to taste)
- 12 slices bacon
Instructions

Preheat your Big Easy according to the manufacturer’s directions.

Slice each onion into 1/2″ thick “steaks.”

Push out the inner rings and reserve them for another use. Leave the last two outer rings together as one unit; do not separate them. If a ring is especially thick, you can cook it as a single ring.

Squeeze Sriracha into a bowl just large enough to fit a ring.

Coat an onion ring in Sriracha, turning to cover both sides. The ring should be well coated but not saturated.

Wrap a slice of bacon around each ring. Don’t wrap so tightly that the bacon chokes the ring, and don’t wrap so loosely it will fall off — allow for some shrinkage as the bacon cooks.

Brush or rub additional Sriracha on the outside of the bacon-wrapped rings for extra flavor.

Place the rings on the Big Easy rack and lower the basket into the cooker.

Cook until the bacon begins to crisp on one side.

Carefully flip each ring and continue cooking another 10–15 minutes, or until bacon is cooked to your liking.

Transfer rings to a wire rack to rest briefly so they firm up before serving.
