Equipment

  • large skillet
  • 9×13-inch casserole dish

Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 1 lb lean ground beef
  • 1-2 garlic cloves, minced
  • 1 cup frozen veggies, such as peas and carrots
  • ½ teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 2 teaspoon Worcestershire sauce
  • ½ teaspoon kosher salt
  • ½ teaspoon ground black pepper
  • 1 cup long-grain white rice
  • 2 cups beef broth
  • 1 cup shredded cheese, such as Swiss or cheddar
  • fresh or dried parsley to garnish

Instructions

Preheat oven to 350℉ and grease a 9×13-inch casserole dish (or 3-qt) with non-stick cooking spray.

  • Heat a large skillet over medium heat and add 1 tablespoon olive oil and 1 medium diced onion. Cook, stirring occasionally, until onions are golden and caramelized, about 5–7 minutes.
  • Add 1 pound lean ground beef to the skillet. Crumble and cook until no longer pink, then stir in 1–2 minced garlic cloves and cook about 30 seconds until fragrant.
  • Stir in 1 cup frozen vegetables, 1/2 teaspoon onion powder, 1 teaspoon Italian seasoning, 1/2 teaspoon salt, 1/2 teaspoon pepper, and 2 teaspoons Worcestershire sauce. Cook 1–2 minutes to thaw the veggies and blend flavors.
  • Add 1 cup long-grain white rice and 2 cups beef broth, stir to combine. Transfer everything to the prepared baking dish, cover tightly with foil, and bake for 30 minutes. Remove foil, sprinkle with 1 cup shredded cheese, and bake uncovered 10–15 more minutes, until rice is tender and cheese is melted.
  • Garnish with fresh or dried parsley and let rest 5 minutes before serving.

Notes

Use long-grain white rice. Instant rice won’t work for this method; brown rice requires longer cooking time and more liquid.

Storage

  • Store: Keep in an airtight container in the refrigerator for up to 5 days.
  • Freeze: Cool completely, then freeze for up to 3 months.
  • Reheat: Microwave individual portions, or bake covered at 350°F for 20–25 minutes until heated through.
