  • 4 tbsp unsalted butter, divided
  • 2 tbsp fresh parsley, chopped

For the Rice:

  • 2 cups brown rice
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • Juice of 1 lemon
  • Zest of 1 lemon
  • 1/4 tsp salt
  • 1/4 tsp pepper

Instructions
