When a Bundt cake feels too large, this loaf-sized version is the perfect solution. This cinnamon crumb cake baked in a loaf pan delivers an irresistible combination of tender cake and crunchy crumb — ideal with a cup of coffee.

I’m a big fan of crumb cakes — the contrast between soft cake and crunchy streusel is hard to resist. A slice of this cinnamon loaf alongside an afternoon coffee is one of my favorite treats.
Many people refer to cakes baked in loaf pans as “breads” (think banana bread), but this is really a cake baked in a loaf pan. Whether you call it cinnamon crumb cake or cinnamon loaf, it tastes like a cozy coffee-time cake rather than a traditional bread.
This loaf recipe is adapted from a larger crumb cake I normally bake in a Bundt pan. Bundt cakes look lovely on the counter, but sometimes I want a smaller cake — so I adjusted the original cinnamon crumb cake recipe to fit a loaf pan perfectly.
For best results, use a reusable metal or aluminum loaf pan rather than a disposable one. Disposable pans can vary slightly in size; a 9.5×5-inch pan is a good match for this batter.

Cinnamon Crumb Cake in a Loaf Pan
Ingredients
Cake:
- 2 cups flour
- ¾ cup sugar
- ½ cup oil
- 1 tsp vanilla extract
- 2 tsp baking powder
- 2 eggs
- 1 cup milk (I used almond milk to keep it dairy free)
- 1 tsp cinnamon
Crumbs:
- 1 cup flour
- 1 tsp cinnamon
- ¾ cup brown sugar
- 3 Tbsp oil

Preheat the oven to 350°F (175°C). Line a 9.5×5-inch loaf pan with parchment paper.

In a bowl, combine all cake ingredients and mix until just combined. Avoid overmixing to keep the cake tender.

In a separate bowl, mix the crumb ingredients until the mixture reaches a sandy, streusel-like texture.

Pour the batter into the prepared pan, then evenly sprinkle the crumb mixture over the top.

Bake for 45–50 minutes, or until a toothpick inserted in the center comes out clean. Let cool slightly before slicing.
