Crispy Baked Sausage and Roasted Potatoes Recipe

How did this recipe come about?

I developed this recipe the night after moving into a new apartment. I hadn’t stocked the refrigerator yet and had already given much of my food to my aunt. After a long day of moving, I slept most of the afternoon and woke up in the early hours with nothing cooked and no delivery options available.

In the fridge and freezer I found russet potatoes, onions, peppers, and a package of sweet Italian sausage. Two days from spoilage and not feeling like going back to bed hungry, I combined what I had. I peeled and chopped the potatoes, sliced the peppers and onions, formed the sausage into pieces, seasoned everything, and popped it into the oven.

The aroma told me it would be good, and the finished dish was comforting and satisfying—exactly what I needed in that moment. It’s simple, hearty, and born from making the most of pantry staples.

A delicious all-in-one casserole that’s simple, quick, and comforting.


Ingredients

  • 2 lbs ground sweet Italian sausage
  • 2 lbs russet potatoes
  • 1 cup onions, coarsely chopped
  • 1 cup green bell pepper, coarsely chopped
  • 1 cup red bell pepper, coarsely chopped
  • 1/4 cup water
  • 1 tbsp olive oil
  • 2 tsp salt
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp Italian seasoning
  • 1/2 tsp black pepper
  • 1/2 tsp red pepper flakes (optional)

Instructions

  1. Peel and cut the potatoes into even-sized cubes so they cook uniformly.
  2. Slice and chop the onions and bell peppers into bite-sized pieces.
  3. Preheat the oven to 375°F (190°C).
  4. Form or slice the sausage into rectangular pieces or rounds, as you prefer.
  5. Place the potatoes, sausage, onions, and peppers into a casserole dish in an even layer.
  6. Sprinkle the salt, garlic powder, onion powder, Italian seasoning, black pepper, and red pepper flakes over the mixture. Toss gently to combine.
  7. Drizzle the olive oil and add the water to help keep the potatoes moist during baking.
  8. Cover the dish with aluminum foil and bake for 60 minutes.
  9. Remove the foil and bake an additional 15–20 minutes, or until the sausage is browned and the potatoes are tender. Serve hot.
