Friends! Easter is less than three weeks away, so now is the perfect time to plan your menu. I’ve gathered some of my favorite Easter and spring desserts from the blog and a few recipes from other lovely food bloggers to make your holiday sweeter.
Full disclosure: many of these are carrot-cake–inspired, because why not? Several of the recipes are also easy to scale for a crowd, so you don’t need to stress about feeding guests.
Some recipes date back to when I first started Baran Bakery, so a few photos could use an update. Don’t judge the visuals—the recipes are still delicious and worth making.






What makes these recipes some of my favorites for Easter and spring?
When I choose desserts for Easter and spring, I look for three things: texture, flavor, and color. I associate food with seasons—fall brings warm spices, denser textures, and orange-brown tones, while spring calls for lighter, airier desserts and softer colors.
Texture: In spring I prefer light, spongy cakes over dense, heavy ones. That said, an “in-between” cake often works well too. A good example of a light cake is my Lemon Poppyseed Sponge Cake with Lemon Cream Cheese Icing, while my Carrot Cake sits nicely in the middle—comforting but not overly heavy.
Flavor: Lemon is my go-to for spring—its bright acidity feels fresh and uplifting. I also love carrot flavors for Easter because they’re traditional and pair well with warm spices that hint at both spring and fall. Other spring-friendly flavors include rhubarb, strawberries, pineapple, rose, and lavender.
Color: Spring brings blooming flowers and pastel hues, so I gravitate toward desserts that can be dressed in gentle, pretty colors. Pastels feel festive without being overpowering, and they make desserts feel seasonal and celebratory.
