Irresistible and Easy Green Garlic Bread Dipping Oil! Made with flavorful extra virgin olive oil and Italian seasonings.
Spring may be winding down, but this Green Garlic Bread Dipping Oil is worth making any time it’s available. It’s simple, bright, and highlights the fresh flavor of green garlic paired with good extra virgin olive oil and classic Italian seasonings.
I love a small, thoughtful appetizer for busy days — a fresh baguette and a bowl of well-seasoned oil is one of my go-to treats. I once asked the great Jacques Pépin what his favorite thing to eat was and he answered, simply, “bread and butter.” I’ll take bread and olive oil any day. A high-quality EVOO elevates this recipe, bringing fruity or peppery notes depending on the bottle you choose. Use a good olive oil — it makes a real difference.
Let’s talk about green garlic!
Green garlic, also called spring or baby garlic, is simply young garlic harvested before the bulb fully forms. It looks like a scallion with a slender white base and green stalks. Its flavor is garlicky but far milder and fresher than mature garlic, with grassy and onion-like undertones — think of it as a cross between garlic and chives. Both the white and green parts are edible, which makes it an ideal ingredient for this dipping oil.
Green garlic is versatile. Try it finely chopped in stir-fries, eggs, or omelets; sautéed into pasta or rice dishes; blended into pestos, sauces, or marinades; or gently infused into olive oil for drizzling over salads and grilled vegetables.
This dipping oil showcases green garlic’s delicate flavor alongside simple pantry spices for a balanced, aromatic condiment that’s ready in minutes.

Green Garlic Bread Dipping Oil FAQs
What can I use if I don’t have green garlic?
If green garlic isn’t available, substitute 1–2 tablespoons finely chopped fresh garlic plus 1–2 tablespoons chopped scallion (green onion) to approximate the texture and balance. The flavor will be stronger, so allow the mixture to sit for 10–15 minutes to mellow before serving.
What kind of oil is best for bread dipping oil?
Use a good extra virgin olive oil you enjoy. EVOO brings distinct flavor and complexity, from peppery to fruity, and will define the final taste of the dipping oil.
Can you make bread dipping oil ahead of time?
For the freshest flavor, make it the day you plan to serve it. The oil is fine at room temperature for a few hours, but because this version includes fresh green garlic, it’s best eaten soon after preparing.
How long does bread dipping oil last?
Oil made with only shelf-stable ingredients can last up to a month refrigerated. With fresh green garlic, consume within 1–2 days for quality and safety. Fortunately this recipe comes together in minutes.
Can I substitute roasted garlic for green garlic?
Roasted garlic will work and adds a sweet, caramelized depth, but it won’t deliver the fresh, grassy notes that green garlic provides. If you use roasted garlic, taste for salt and adjust accordingly.
What kind of vinegar or acid is best?
Lemon juice complements green garlic’s bright flavor in this recipe. Balsamic is classic for some dipping oils but here it would overpower the green garlic’s freshness, so I don’t recommend it.
What kind of bread is best for dipping?
A freshly baked baguette is my favorite for its crust and soft interior, but any high-quality white bread works well. Avoid very strong-flavored breads like rye or pumpernickel that compete with the delicate oil.
How do I reheat leftover bread dipping oil?
This oil is served at room temperature. If refrigerated, bring it back to room temperature before serving rather than heating it in a microwave.

Ingredients
- 1/3 Cup Extra Virgin Olive Oil
- 1 Stalk Green Garlic finely chopped, about 3-4 tbsp
- 1 Tbsp Freshly Squeezed Lemon Juice
- 1 Tsp Dried Basil
- 1/2 Tsp Dried Oregano
- 1/4 Tsp Salt plus more to taste
- 1 Tsp Toasted Sesame Seeds
- Black Pepper to taste
- Red Pepper Flakes optional, to taste
Instructions
-
Finely chop the green garlic, using both the green stalk and the pale white base. You should have about 3–4 tablespoons depending on the stalk.
-
Pour the olive oil into a shallow bowl. Add the chopped green garlic, lemon juice, dried basil, dried oregano, toasted sesame seeds, black pepper, red pepper flakes (if using), and 1/4 teaspoon salt. Stir and taste, adding more salt if needed.
-
Mix the ingredients well until combined.
-
You can serve the dipping oil immediately, but for best flavor let it rest for 10–15 minutes so the green garlic can infuse the oil.
-
Enjoy with fresh bread.
Notes
- To add a nutty dimension, don’t skip the toasted sesame seeds — they pair surprisingly well with the fresh green garlic.
- If substituting mature garlic, combine 1–2 tablespoons finely chopped garlic with 1–2 tablespoons chopped scallion and allow it to marinate 10–15 minutes to mellow the raw bite.
