Classic Beef Stir Fry

To celebrate my blog anniversary I’m sharing a favorite from my cookbook. If you want a quick, satisfying meal loaded with vegetables and protein, this beef stir fry is an excellent choice for a 20-minute dinner.

Simple Ingredients

  • Vegetable oil or olive oil – use any oil with a high smoke point.
  • Beef sirloin or flank steak – skirt steak works well too; slice into 2-inch strips.
  • Broccoli florets
  • Bell peppers – red or any color, cut into strips.
  • Carrots – matchstick or thinly sliced.
  • Garlic – minced.
  • Low-sodium soy sauce – coconut aminos can substitute.
  • Brown sugar
  • Sesame oil
  • Sriracha – adjust to taste for heat.
  • Green onions – sliced for garnish.
  • Sesame seeds – toasted, for finishing.

Veggie Variations

Use whatever fresh vegetables you have on hand—this is a great way to clean out the fridge. Good substitutes or additions include:

  • Snow peas
  • Bok choy
  • Green beans
  • Baby corn
  • Water chestnuts

What to Serve With This

Serve the stir fry over white or brown rice. For a low-carb option, use cauliflower rice.

Ingredients

  • 2 tablespoons vegetable oil, (or olive oil)
  • 1 pound beef sirloin or flank steak, cut into 2-inch strips
  • cups broccoli florets
  • 1 red bell pepper, cut into strips
  • 1 cup matchstick carrots
  • 2 cloves garlic, minced
  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon brown sugar
  • 1 tablespoon sesame oil
  • 1 teaspoon sriracha
  • 1/4 cup sliced green onions
  • 2 tablespoons toasted sesame seeds

Instructions

  • In a large skillet or wok, heat oil over medium-high heat. Add the beef, season with salt and pepper, and cook until browned, about 4 minutes.
  • Push the beef to the side of the pan. Add broccoli, bell pepper, and carrots in a single layer. Cook the vegetables for about 3 minutes, then add the garlic and cook 30 seconds more.
  • Stir in the soy sauce and brown sugar, and cook until the vegetables reach your desired tenderness.
  • Drizzle with sesame oil and sriracha, then sprinkle with green onions and toasted sesame seeds. Store leftovers in an airtight container in the fridge.
