Easy, fast and delicious, this homemade freezer garlic bread is the perfect addition to any meal. Bursting with garlic and herbs, it’s ready from the freezer whenever you need it. Vegetarian, with a dairy-free/vegan option.

We’re kicking off the season with a simple, versatile recipe that works as well on a weeknight as it does at holiday gatherings. This homemade freezer garlic bread gives you buttery, herb-packed slices that bake up crisp and golden straight from the freezer.
Start with a fresh baguette—store-bought or homemade—slice it most of the way through, smear in a flavorful butter and herb mixture, wrap it up, and freeze. When you want it, there’s no thawing required: pop it in the oven and bake until golden.
Quick, convenient, and endlessly satisfying—especially for garlic lovers and anyone who appreciates a good crusty slice of bread.

Tips & Tricks
- Use a very fresh baguette for the best texture and flavor. Prep it and freeze it the same day you buy it for optimal results.
- Both white and whole wheat baguettes work well; choose based on your preference.
- Be gentle when spreading the garlic butter into the slits. If the loaf breaks, press it back together, wrap tightly, and it will freeze and bake fine.
- It can get a bit messy while filling the slits—expect that and enjoy the process.
- This is a homemade take on the popular frozen garlic breads you can buy; it’s easy to make and more economical.

Easy, fast and delicious, this homemade freezer garlic bread is the perfect addition to any meal! Filled with garlicky, herby flavor, you can have this homemade bread ready to go whenever you need it. Vegetarian with a dairy free / vegan option.
Ingredients
- 1 (about 11 to 13 ounce) baguette
- 6 tablespoons unsalted butter, soft at room temperature*
- 2 to 3 large cloves garlic, minced (to taste)
- ¼ cup lightly packed fresh parsley, minced
- ¼ teaspoon onion powder
- ¼ teaspoon salt
- Pinch of pepper
Instructions
- Place the baguette on a work surface. Using a serrated knife, make deep slices every 1 to 1¼ inches along its length. Cut about ¾ of the way through the loaf so it remains intact.
- In a small bowl, combine the butter, garlic, parsley, onion powder, salt, and pepper. Mix until well blended.
- Gently spread the butter mixture into each slit. A butter knife works well for this task.
- Wrap the baguette tightly in plastic wrap (two layers recommended) and freeze.
- When ready to bake, preheat the oven to 375ºF. Line a baking sheet with parchment paper and place the frozen baguette (unwrap first) on the sheet.
- Bake about 15 to 18 minutes, until golden brown. Let cool briefly, slice using the pre-cut slits, and serve immediately.
Notes
*To keep this dairy-free/vegan, use your preferred dairy-free butter.
You can bake the loaf immediately if you prefer; it will likely require slightly less time in the oven.
Starting with a fresh loaf gives the best result. You can adapt the size of the bread and the amount of filling, but you may need to adjust baking time accordingly.
