Happy Valentine’s Day! We created these charming rose lollipops using dried edible rose petals and tiny flakes of edible gold. The contrast of delicate petals and gold specks inside the clear candy makes each lollipop look like a tiny jewel.
These lollipops make beautiful favors for weddings, showers, birthdays, or other celebrations. Wrap each one individually and tie with a ribbon or a small note. The recipe is straightforward, but a candy thermometer is essential to reach the correct temperature for hard candy.
I love how the dried roses and gold leaf look inside the candy. We placed the petals and gold in the molds before pouring the hot syrup to create suspended, decorative pieces. Below are photos of the finished lollipops and the molds we used.

How To Make Homemade Rose Lollipops
- Lightly coat silicone candy molds with cooking spray and set aside.
- Combine sugar, water, and corn syrup in a saucepan over medium heat, stirring until the sugar dissolves.
- Attach a candy thermometer and cook the mixture until it reaches 300°F (hard crack stage).
- Remove the pan from heat, then stir in the rose-flavored extract.
- Stir for a minute to ensure the flavor is evenly distributed.
- Place dried rose petals and small pieces of edible gold leaf in each mold cavity.
- Carefully pour the hot candy into the molds and insert lollipop sticks while the syrup is still warm.
- Allow the lollipops to cool and harden completely before removing from the molds.
- If you used plastic hard-candy molds, gently pull the lollipops free once they are fully set.

Homemade Flower Lollipops
These floral lollipops are striking and versatile — perfect for weddings, birthdays, showers, and Valentine’s Day. They’re impressive to look at yet simple to make with just a few ingredients. The presentation alone makes them a memorable treat.
Edible Flowers
Edible flowers add color, aroma, and subtle flavor to candies. Roses are a classic choice, but consider trying violets, pansies, or nasturtiums for different flavors and looks. Always use flowers labeled as edible and sourced from a reputable supplier.
Lollipop Molds
Silicone molds are ideal for homemade lollipops because they’re flexible and release candy easily. Choose molds that include slots or holes for lollipop sticks so the sticks stay in place while the candy sets.
Eden’s Tips
- Hand wash silicone molds in warm, soapy water and dry thoroughly before use.
- Have lollipop sticks ready before you pour the hot candy.
- Don’t remove lollipops until they are fully hardened to avoid bending or breakage.
- Store hard candy in a cool, dry place. In humid conditions, seal candies in airtight containers with a desiccant to prevent stickiness.
